“All our pasta is either homemade or imported from Italy,” says owner Flaminia Morin. “We offer whole-wheat and gluten-free varieties in addition to traditional blends. Diners can create their own dishes by selecting their own type of pasta, sauce and toppings. We’re ready to please seafoodand meat-lovers as well as vegetarians.”
Top the pasta with your choice from 15 varieties of sauce, she says, and tasty add-ons.
“Everything is made at the last minute,” Morin says, “so that it’s very fresh.”
When Morin moved from Rome to Miami, she says, she brought all her family recipes with her, including such rarities as her grandmother’s special marinara sauce, Sugo della Nonna. Here, she teamed up with Chef Paolo Del Papa, who served an apprenticeship with the famous Chef Antonello Tagliabue, and describes his cooking “as fresh and genuine Italian as it gets.”
Yes Pasta! Italian Trattoria, Morin explains, was created with one goal in mind: “I wanted to serve Italian specialties made only with fresh local and very select imported Italian ingredients.”
Chef Paolo’s specialties include Dentice al Forno –– red snapper with shrimp, mussel and calamari –– and Filetto di Manzo con Pancetta –– beef tenderloin with pancetta in a herb sauce, fried calamari and zucchine fritte. Look for daily specials based on the availability of fresh ingredients.
For lunch, Morin says, attention goes to light soups, fresh salads and delicious, innovative paninis.
