Imperial Club names directors for nursing, food service

The Imperial Club Retirement Community, 2751 NE 183rd Street, Aventura, named Evelyn Watkins director of nursing and Hector David Lima director of food services.

Watkins, a registered nurse, has a more than 20-year career in healthcare and is licensed both as a nursing home administrator and healthcare risk manager.

“My goal at the Imperial Club,” she says, “is to maintain a standard of excellence while improving the quality of life for all who reside here.”

Lima in the past has been with Brookwood Garden Skilled Nursing and Palace Assisted Living. A graduate of the Culinary Institute of America University, he has more than two decades of experience in the food service industry and has dietary management certification from Florida University and an associate of science in culinary arts degree from Johnson & Wales University.

Spring Strong, Imperial Club’s executive director, says Lima has been executive chef at the New York Hilton Hotel and took part in the creation of menus at the famous Grand Bay Hotel in Coconut Grove and several local assisted-living communities.

“Hector devotes his energies to creating pleasing menus and presentations to his clientele,” Strong says. “Mr. Lima’s true talents shine for the special banquet occasions.

He is known for his ice sculptures and carved fruit displays.” She says residents of the Imperial Club community have a choice of enjoyable and exciting programs, activities and social events for both independent and assisted living.
